Apple Sauce Elk Meatloaf

1 cup apple sauce
2 T. chopped onion
salt and pepper to taste
2 T. prepared mustard
1 lb. ground elk meat
1 t. vinegar
1 cup brown sugar
1 cup soft bread crumbs
1 T. finely chopped celery
1 egg, beaten
2 strips lightly cooked bacon, crumbled (optional)

Combine bread crumbs and 1/2 cup apple sauce.
Add onion, salt and pepper, celery, 1 T. mustard, egg and ground elk. (also bacon if desired) Blend thoroughly
Shape into a round in a 9x9x2 pan.
With a spoon make a depression in the top of the loaf.
Combine the remaining apple sauce, brown sugar, vinegar and mustard.
Pour into the depression in meatloaf. Bake at 350 degrees for one hour.
