Filet of Elk
2# whole elk filet
1/2 cup vegetable oil
1/4 cup soy sauce
Grated rind of one orange
Freshly ground pepper
1/2 T. minced Garlic
May also add 1/4 cup of Madeira or Red wine
Marinate fillet in remaining ingredients for 2-4 hours, turning often.
Make a double layer of tin foil, turn up edges and place in bottom of roasting pan.
Remove fillet from marinade and place on foil. Bake in preheated 450 degree oven for 15-20 minutes (time will vary depending on size of fillet) until internal temperature reaches 120 degrees on a meat thermometer.
Remove from oven and let sit for 5-10 minutes before carving. (meat will continue to cook)
This will give medium rare meat. It can also be placed on tin foil with cooking juices. Seal foil and refrigerate. Meat will absorb juices. Great served cold.
